We started out with Croque Monsieur for breakfast. Although I'm not sure Dan was sure about the menu choice he did enjoy them. Just layer black forest ham and guyere cheese on rich and thick potato bread and dip in egg/ milk wash. Make sure your 3-4 tbsp of vegetable oil is hot. Slice the sandwiches up into for finger size sandwiches and put into the oil in your frying pan. Brown on both sides and serve with your favorite jam. I did put them on a papertowel to soak up any extra oil.

Second part of the morning we were off to Marche Provisions for Wilder's second birthday celebration. What a special girl in her tutu and crown. They get to stay at a Disney hotel and share special time with Grandma Judie and each other. We are so blessed. These wonderful and loving children adore each other and I'm sure this time will be something to remember for a lifetime. Grandma Judie feels so blessed to have these children in her life. We started out on Wednesday evening at Aunt Lishy and Uncle Rob's house for the celebration of the Squire's 48th anniversary. What a milestone! Pop gave Susan the most beautiful roses. This is Dan's favorite thing in the world because Lishy serves up a big nosh so we can all eat until we cannot move. I ate so much cheese I couldn't eat any dessert.

Uncle Rob sets up the race cars in the garage so the kids could have some fun too. Lishy gave us the most lovliest Christmas morning breakfast with hashbrowns, juice, coffee ring, and eggs. Samuel was thrilled with his new MP3 player and his XBOX live year long membership. Dan and Samuel spoiled me rotten with a new Nikon Camera and a beautiful new red vest. We then headed over to Grandma Judies' for our family Christmas baskets. Our favorite things including new Sonicares for everyone. She is concerned about our dental hygiene. On to our next stop at the Squires for a snack and circus of gifts. Susan bought us the dearest first year ornament for our family it is engraved with our names, the year and a photo of us. As we treked back across the city to Grandma Judie's for a yummy dinner with our wonderful friends and family. We were exhausted by the end of the day but boy was it worth it!

Christmas Spirit

Well we are moving ourselves into the Christmas spirit tonight. I've been more than unmotivated to get things started this year. With everything going on in our little lives today it seemed unimportant. The morning started by sitting in my chair and checking email. The doorbell rang and my landlord dropped off a Christmas card with a small gift. It was very sweet. The next thing I knew it was time for the Jets game. This is always a difficult thing for me. Dan takes the Jets wins or losses very much to heart. Sometime during the first quarter Dan started to send subliminal messages about waffles. He and Samuel got some waffles with warm cherry sauce on top to help the football game go down easier. It is an adjustment for me as football has not been a big part of my life in the past. Luckily the Jets pulled off a win today and Dan was very cheerful. Dan and I went to find our first tree today as a married couple and that did feel like a small accomplishment. Samuel decided to stay home. He is a teenager. We came home to put up our little Grand Fir. I must say I love the smell. Dan and Samuel worked to make the tree straight and string the lights. I was off to the kitchen to make some cozy chili and cornbread.

Patty's Chili
1 lb Groud Beef
1/2 lb Ground pork
1 Medium Onion
2 Cloves Garlic
1 Bottle of Beer
1 28 oz can of tomato puree
1 Can Red Kidney Beans
3 Tbsp Worcestershire Sauce
2 Chipotle Chilis in Adobo Sauce
1 1/2 cups of water
1 can Tomato Paste
Salt & Pepper
1 1/2 Tbsp Chili Powder
1 Tbsp Cumin

Place onion and garlic, finely chopped with small amount of oil in large soup pot or dutch oven Add gound beef and pork cook until brown. Add one whole chopped onion and both cloves garlic, finely chopped. Add Chili Powder and Cumin, Salt and pepper to meat. Pour in can of tomato puree, kidney beans and mix. Add bottle of beer and worcestshire sauce. Chop pepper and add to mixture. Let simmer for about five minutes. Add one can tomato paste and 1.5 cups of water. Bring to a boil and let simmer for approx 30 minutes. Serve with corn bread and honey butter.

Now full we sit with our Christmas tree twinkling nicely with our colored lights. Dan and Samuel are watching Polar express in 3-D. They are very cute with their paper glasses on. I think the cat is allergic to the tree...she has started sneezing. I hate to say it but it is kind of funny.

Happy Holidays to one and all.......

Patty's Pot Roast Provencale

Dinner tonight:

3lb chuck roast
Herb de provence
v8 juice
garlic
onions
Yukon gold potato
carrots
white button mushrooms
worcestershire sauce
cream of mushroom soup
salt
pepper
vegetable oil
red wine ( or if you're not a wino like me use balsamic vinegar)

Although I know that no one in Provence would use cream of mushroom soup I thought I would post my twist to an all time favorite.

Rub roast with herb de provence and flour. The rain is back and so is the cold. But we have great memories of our time in Hawaii. To the right is a picture of the sunrise on our first morning waking up in Maui. It was spectacular. Dan had never been to Hawaii and I was concerned that since he is not a sun lover that he wouldn't be too thrilled about it. Boy was I wrong. He loved it. Maui is a great low key place with tons of exploring, shopping and just relaxing. The relaxing part was my favorite. We had some fabulous meals! I think we ate a different cuisine every night. We found this funky little shope in Lahaina that sells birds, pot-belly pigs, and plants that are already inspected by the USDA so you can take them home on the plane. It was so fun. I thought Dan was going to bring home a pig named Linus. However, I think one of the birds was more attached to him than the pig. We are trying to get pictures together from the wedding to send out to our family and friends. We'll keep you posted.

Post Script:

Our family is dealing with some big changes...please send love and prayers their way. So many of family and friends celebrated our day with us. Our service was lovely. I felt like I have never felt before standing there with my Dan. It was amazing. The flowers were stunning. My talented Sister in-law created my perfect setting. Deep dark red roses, chocolate sunflowers, burgundy and purple dailias, grasses and so many things I cannot even name. So colorful and so perfect. My bouquet is still stunning and I am hoping that I can dry it so it will retain some of it's original beauty. The food was outstanding...everyone seemed to enjoy it although I didn't get to eat much myself. We had Sangria, wine, beer, salads, antipasta platters, meats and cheeses and fabulous bread from Great Harvest in Corvallis. My dear Cousins, Travis and Sara, provided. Sangria was made by my lovely Sister in-law Angie. My hair and make-up was done by Dan's charming and kind neice, Erika. I felt absolutely gorgeous. That girl really has some talent. Photos were taken by my dear friend Maricel. Such a talented and artistic woman. I cannot wait to see and share the photos. This was all topped off by the setting .....sigh.... I'll share more detail later. Please enjoy the couple of candids.

Lemon Cookies and Bunko

Saturday night I went to my monthly Bunko group. We have themes for our Bunko get togethers and instead of winning money we when gifts that go along with the theme. This Saturday the theme was cooking. One of my favorite things to do. We I non-chalantly walked in to Roxanne's house and they all yelled "SURPRISE". I just sort of stood there.... having no idea why there were suprising me. They were throwing me a Bunko Shower! We ate lots of yummy things. Roxanne's husband, Al, makes a yummy marinated chicken. Roxanne made finger food. My favorite was the pitted dates wrapped in pepper bacon. Roxanne made parfaits with pound cake, Grand Marnier, raspberries, blueberries and whip cream. Yum. Anyway. Thank you to all my Bunko friends for being so wonderful. It was a very fun time.

I had a lovely weekend. Along with the Bunko Shower Dan and I went to watch the new X-files Movie. It was pretty good. Like a long episode. I miss Mulder. Samuel missed out he is away at his Dad's this week visiting the new baby.

Samuel also missed out on dinner tonight. His favorite (and Dan's) Chicken Cordon Bleu with honey mustard sauce. Dan has also been asking me to try making Lemon cookies. I'm not a baker but I thought I would give it a try.

Lemon Cookies

Cookies:
1/2 c. sugar
1/2 c. unsalted butter
1 tsp pure vanilla extract
zest of one lemon
3 eggs
2 1/4 c. flour
2 tsp. baking powder
pinch of salt

Frosting
1 tbsp unsalted butter
2 tbsp cream cheese
juice of one lemon
1/2 tsp pure vanilla extract
3 cups powdered sugar

Place sugar and butter in miser bowl using an electric mixer, cream on high speed until fluffy and lemon colored. I'm having fun this summer. I'm having a few days off work catching up on wedding stuff and cleaning up the house. The wedding is coming so fast. I just hope I can get everything finished.

We've been trying to have people over for dinner as our little house allows. Here is my new favorite dessert. Berries with vanilla yogurt sauce. It doesn't sound very inventive or exciting but oh my goodness does it taste good.

Fresh berries or fruit of your choice

1 and 1/2 cups vanilla yogurt

1 tsp. cinnamon

1/2 tsp. nutmeg and mix

Serve sauce over individual bowls of fruit or berries. (Would be very good with peaches)

Lazy Summer... I'm trying to break a record and plan my wedding within two weeks. Yea....wish me luck. We did receive my dress this week. A month before we thought it would arrive. We were very daring and ordered the dress online. I did go in and try a bunch of dresses on but they were too foo foo for my taste. This one is just perfect for me. It arrived on Thursday and guess what...it fits! Tomorrow I'm meeting with my sister in-law to be. She will be doing my flowers for the wedding. I'm very excited because she works at one of the nicest flower shops in town and is extremely talented. I also picked up the invitation supplies this week and will have them printed next week. Everyone start looking for them in the mail in about 2-3 weeks. We also met with the catering person this week. Should work out well for our Tuscan feast. More like Tuscan finger food ...and don't forget the Sangria...

So in order for me to plan the wedding Dan thought he needed a new project to work on. Oh boy....... He brought home a 1940 Philco console radio last week. He is in heaven because he loves detailed projects. He is doing lots of research and buying little bits and pieces to get it working. It is actually a lovely piece of history. I'm sure he'll be listening to his A.M. band radio here very soon. (Possibly two months). He was able to take the insides out and take it work to clean off 70 years worth of dust. I'm just happy the whole thing doesn't have some funky old smell since its sitting in my dining room.

<link rel='alternate' type='text/html' href='http://pattysquire.blogspot.com/2008/07/lazy-summer-i-dont-think-so.html' title='Lazy Summer... We tried to make the whole weekend special for Dan. Saturday we spent the afternoon bowling with Dan's brother and his family. Just so everyone knows none of us are very good at bowling. After bowling I decided to take my boys out to a special birthday dinner at our favorite Italian Trattoria. We ate well. Dan had special Ravioli with pesto cream sauce and shitake mushrooms. I had bishops hats filled with ricotta and pancetta with a butter sage sauce. Samuel had your traditional lasagne and a ceasar salad. He claims they have the best ceasar ever! (probably because Dan told him that) After dinner we walked across the street to a local bakery to indulge in some sweet treats. We bought some lovely berry custart tarts, and I discovered that they make chocolate-cherry sourdough bread. I never knew such a thing existed. It was VERY good.

Sunday we woke Dan with fresh baked scones, his favorite. We gave him his presents and played all day long. We had a party and invited Dan's family. I made chocolate pound cake and Dan had made perfect Banana ice cream to serve on top. It was delicious! A perfect weekend for our special birthday Man!

The Bag Lady's Chocolate Pound Cake

3 c. Patty, yesterday I tagged you in a blog tag. I realized later that I guess I was suppose to let you know I tagged you...Did you ever have that feeling when you were a kid, when someone tagged you in a tag game that you didn't know you were playing in, or they started the game without letting you know, and then they tagged you?Well, here's the tag:1. Write the title to your own memoir using 6 words.2. Post it on your blog.3. Link to the person who tagged you.4. Tag five more blogs. So if someone leaves a comment on your blog, do they get dinner at a dinner party made for them?

The above tag was issued to me some time ago and I have been remiss in responding to it. I've had phone calls that I need to update my blog. I better get on the stick.

My memoir: Looking for the right way.

I have spent many of the last 20 years wondering what I way I should be going. If I was doing the right thing, loving the right people and living life the way I should. I'm happy to say that I've finally discovered that the right way was taking life as it came. We spend so much time searching and waiting for next thing the next big event, we don't always take the time to realize we're missing life. A friend of mine is always saying she needs to get a life. But we each have one. We are dealt cards and we make choices. Life is certainly the choices we make... It is influenced by other's choices but in the end it is what we do with those things and how we react. God has given me so much and I think it took me a long time to realize that. Please bear with my short philosophical muttering.

So I'm going to be obnoxious and tag people.

Brenley
Anna
Candis
Dana
Ryan O
Tammy O

On the table:

Chicken Enchiladas

1.5 lbs boneless skinless chicken breasts
1 packet Enchilada seasoning (I like to cheat sometimes)
1 8 oz can tomato sauce
1 small can diced chilies
1 small can sliced olives
1 yellow onion
1 package 8-10 inch flour tortillas
2 cloves garlic
8 oz Monterey Jack Cheese
12 oz sour cream
Salt
Pepper
Vegetable oil

Add 2 TBSP vegetable oil to large skillet over medium heat. Lay tortillas on flat surface and put together as follows

Tortilla
Cheese
Chicken mixture
Dollop of sour cream
Fold and put in casserole dish

Top with remaining Enchilada sauce and sprinkle cheese over the top. Bake for 25 minutes at 375 degrees.

Green Chicken A la Lish (Pesto Chicken)

1 lb pasta your choice ( I used bow-tie)
1 bunch of fresh basil
3.5 Tbsp Olive oil
1.5 lbs boneless skinless chicken (breasts or thighs)
2 cloves garlic
3/4 cup shredded parmesan
1/2 cup pine nuts optional
Salt and pepper

Cut chicken into bite size pieces; in large skillet brown chicken in olive oil, salt and pepper (again we love pepper).
In your food processes add garlic, basil, pine nuts and parmesan cheese. What with Mother's Day and a whole slew of birthdays in the family. Today happens to be my mom's birthday. Happy Birthday to my mom...Thank you for all you do. For my Birthday my dear friend Maricel offered to take our family pictures. That is our "new" family ...here is a picture of the three of us. We are sooo happy. Maricel is one of the most talented women I know. She is an amazing mother and artist and I'm proud to call myself her friend. My boys were very sweet to me over my birthday. They purchased me some Le Creuset items that I've been wanting as well as some adoreable bird stamps for my card making. My Sister in-law to be made me a lovely dinner. Another talented woman in my life. Thanks Lish!

I indulged myself this week. I took Friday and Monday off from work. I've had some great times. I had fun just relaxing and planting some flowers. My Mother and Father in-law gave me flowers for my back porch too. I'm just the luckiest girl. As my friend Ryan says... I deserve it. I'll have to keep telling myself that.

On the table:

Chicken Cordon Bleu a la Patty:

1-1.5 lbs thin sliced chicken breasts
Sliced prosciutto (approx. six slices)
Sliced provolone or Swiss cheese
1.5 cups Italian Bread crumbs
1 Egg
1 cup milk
Salt & pepper

Mustard Sauce:
5 Tbsp. She is lovingly named in part after the beautiful and crazy Aunt Nan. Although Gussie is slightly unstable and suffers from some bipolar behaviors, she is our constant entertainment. Dan and Samuel might argue that she belongs to each of them but I know differently. How do I know? you ask.... Because. Every morning when we wake up it is time for mama time. She crawls up on to my chest and rolls over with her head tucked under my chin. She purrs loudly. A couple mornings ago she actually placed both her paws on my face and started kneading it. It was a sweet gesture however painful. She loves to make people feel at home in our house. She will crawl up on your lap and roll onto her back and while you try to rub her tummy… she will bite your hand heartlessly. But it is all with love. Gussie also loves to talk. She has many stories and LOTs of complaints about her life of leisure. You can often find her staring out the window chattering at her friends who are visiting our bird feeder. She spends much time napping at the end of our bed or in the sun by the back window. When Samuel is home he cannot leave her alone because he adores her. And when he is calm and still she will actually lay on his lap. We love her and our house would feel lonely without her. We're very glad she is here!

These men in our lives

My Brilliant man....

So not all of you may know this but my man is so brilliant! (and no,I'm not biased). He has been working on a small project. These are interesting things that he enjoys. By proxy Samuel and I are learning a lot. He created a small crystal radio. He has been facinated by crystal radios for some time. He learned about a WWII fox hole radio on a TV show about POWs. He created one of his own made out of a pencil lead, copper wire, a blue razor blade and various and other sundry items. Believe it or not IT WORKs! He has been putting it together over the last week or so. I got to see her for lunch yesterday. She is funny and makes me smile. I was laughing at the BellaArtgirl blog. She called Missy the "Baby whisperer". Missy loves babies and has raised two of the cutest on her own.

Well. I had big plans to make a lovely dinner last night. However, we ended up having to pick up Samuel at his track meet across town. It was quite a lovely day pouring rain and wind. Samuel was shivering after his meet. We totally splurged for dinner and I will describe in detail. Mazzi's Italian Restaurant. http://www.mazzis.com/aboutus.php Samuel had a custom pizza of which he ate the entire thing along with salad, fresh bread, and an Italian soda. Dan had a beautiful Lasagne and had a Black Currant Italian Soda. The waitress really wanted me to have a salad even though I didn't order one... But it was very good with my YUMMY baked ravioli.
baked ravioli:
Our own ravioli filled with ricotta & Parmesan cheeses & spinach, then baked with a hearty mixture of meat sauce, ricotta and mushrooms, topped with mozzarella and Parmesan.

I love to feed my boys...even if it is cooked by someone else. Only because everyone else is doing it. I just couldn't help but succumb to the peer pressure. Big things in my life this year include the following:
My Samuel turned 15 yesterday!
I became engaged in March.
We're getting married on September 13th!

I'm currently in the planning stages for our wedding and could use all the suggestions I can get. We're having a low key event at a local farm. My theme is sort of a french country idea I came up with. My sister -in-law to be will be doing the flowers as she is a most talented florist. I'm currently trying to look at options for our wedding invitations. http://www.mygatsby.com/This is a very fun website if anyone is looking for stationary or invitations of any kind.
My Cousin, Candis just started a book blog for mom's that read.( http://readingmothers.blogspot.com/) I think it will be a lot of fun.
